Excellent flavor, easy & quick prep, and makes for great leftovers!! Few dishes to clean. This is going in the rotation. I read many of the other comments which was helpful. We marinated chicken for just an hour, sprayed the foil, mixed white & brown rice with chicken broth (rather than water), added canned diced tomatoes, and went heavier on artichokes. Leftovers the next day were just as good or better than first night. I added a little mozzarella cheese at the end of heating & that was very good.
I have made this many times and everyone I've made it for has loved it. I marinate the chicken in the pesto dressing and the tomatoes and artichokes seperately so there is more flavor . Delicious!
haven't made this yet but, I was wondering can these be made ahead of time and put in the freezer?If you can freeze them should you freeze before cooking till needed or fcook and then freeze Thank you
Instead of making 6 foil packs I turned it into a casserole, the problem with that is it took an hour to cook, yummy. The next time I make it I will add a little salt to the rice and water mixture
Maybe I did something wrong, but the chicken was dry and the rice was undercooked. Kind of hard to check on the doneness of the rice when its foil packed.

I think my husband and I both realized with this recipe that we don't like artichokes. Despite not liking the artichokes, I thought the different flavors were kind of weird together....the pesto, the dressing, the artichoke flavor. Personally, if I were to make this again I would only use 1 or 2 artichokes in the packet for some flavoring and the pesto. I would omit the dressing all together.
This is my favorite! The flavor is Great! and there is no dishing up! Just open your pack! Love it! I do make more pesto sauce and put it over the rice. Awesome! And I have made it on the grill too!Oh and I use chicken broth instead of just water for the rice. Making it TONIGHT!
As others have stated, this was very easy to put together. I did marinate my chicken for about an hour or so before I put the meal together. My chicken took much longer to cook, but they were on the larger side. I was afraid the extra cooking time would burn the rice but it did not! This dish does make A LOT of rice! I used instant brown and we had enough rice for two meals - would cut back on that next time I make this meal. My husband LOVED this dish and commented on how flavorful it was several times during dinner.
