What You Need

cups instant white rice, uncooked

cups warm water

small boneless skinless chicken breast halves (1-1/2 lb.), 1/2 inch thick

can (13-3/4 oz.) artichoke hearts, drained, quartered

large tomatoes, chopped

cup KRAFT Zesty Italian Dressing

cup pesto

Make It

HEAT oven to 400°F.

MIX rice and water; spoon onto centers of 6 large sheets heavy-duty foil. Top with chicken, artichokes and tomatoes; drizzle with combined dressing and pesto.

BRING up foil sides. Double fold top and both ends to seal each packet, leaving room for heat circulation inside. Place in 15x10x1-inch pan.

BAKE 30 to 35 min. or until chicken is done (165°F). Remove packets from oven; let stand 5 min. Cut slits in foil to release steam before opening.

If the chicken breast halves in your market are larger than 4 oz., they will take longer to cook. Be sure to cook them long enough so that they are no longer pink in the centers and the juices run clear.

My family loved this recipe. I'm not a big tomoto fan so I used just a few slices. I wish I would've used more tomoto because they cook down and my husband-to-be said they help with the tang of the artichokes. We will have these again!

Good. Unique flavor and ingredients. I cooked it on the great and worked great. I used a bit less pesto than suggested because I ran out which led it to be a bit too bland.

I made this recipe for the first time over the weekend and automatically doubled the artichokes because my husband loves them. It was a good move, because otherwise, it would have been a packet of just chicken and rice! I also doubled the sauce but felt the packets still needed even more seasoning. And the rice -- wow! That was a whole LOT of rice! Next time, I will stick with doubling all the veggies (artichokes and tomatoes). I'm going to triple the sauce and reduce the rice by about a third. Overall, it's a good, easy recipe, but just needs a little tweaking.

This was an excellent dish! It was very easy to make, but tasted like I had spent a long time on it. I don't usually like rice too much, but this had a great flavor to it, because it cooks in the marinade. Yum!
