Foil-Pack Fish Florentine

I made just one foil pack and this was great for a single dinner. Like the last comment, I had to leave this in the over a little bit longer than the recipe calls for.

What You Need

cups instant white rice, uncooked

cups warm water

lb. flounder fillets, cut in half crosswise

cups fresh spinach leaves, coarsely chopped

cup PHILADELPHIA Chive & Onion Cream Cheese Spread

cup KRAFT Sun Dried Tomato Vinaigrette Dressing

Make It

PREHEAT oven to 375°F. Mix rice and water; spoon evenly onto center of each of 4 large sheets of heavy-duty aluminum foil. Top evenly with half of the fish. Cover with the spinach, cream cheese spread and remaining fish pieces. Drizzle each with 2 Tbsp. of the dressing.

BRING up foil sides. Double fold top and ends to seal packet, leaving room for heat circulation inside. Place foil packets in single layer in 15x10x1-inch baking pan.

BAKE 15 min. Remove packets from oven; let stand 5 min. Place 1 packet on each of 4 dinner plates. Cut slits in foil with sharp knife to release steam before opening.

I liked this a lot. Added some salt and pepper at the end, but it was okay without it. I followed another person's tip of mixing the cream cheese and dressing together to make it easier to dollop on.

A friend e mailed me this recipe today and it was just what I was looking for. Made it tonight with filet of Sole and it was wonderful. Even my picky son who doesn't like fish loved it.

I have made this on several occasions and got rave reviews every time. It is good cause you can make it for asa many people as you need with out much trouble.

Very pretty presentation and subtle flavouring. Next time I will mix cream cheese with dressing to get mixture more evenly distributed.

After reading the comments it seems that either you love this recipe, or you hate it. I made it and my husband loved it, and I hated it. The bottom piece of fish was not flavored at all, the cream cheese was only in one spot on the spinach, and the dressing was too sweet for the rice and fish.

My family didn't really care for this recipe, but I really liked it. It was very easy to make and is a well-rounded meal. The cheese and salad-dressing combo. works very well together. One hint: Put the cream cheese on the fish first, then top with the spinach and follow with the salad dressing. The cheese is much easier to spread if done this way.

I didn't listen to previous raters' advice to use a minimum amount of cream cheese. Next time I'll use 2 tsp vice tablespoon. Otherwise the dish was tasty and nutritious.

Excellent recipe! All of our family enjoyed this meal. I followed the recipe exactly and it turned out beautifully. My husband is a very picky eater and he loved this meal. My 4 year-old cleaned his plate, spinach and all. I am planning to make this recipe again, I think it will become a regular at our table. Thank you Kraft for such a quick, easy and delicious recipe!
