I make this alot, it's quick and easy and we really like it.
To cut down on cook time I cook the brown rice in the microwave, boil or ssaute the chicken breasts first, then throw it together and cook about 35 minutes.
It can be it little on the bland side though so I do tend add different seasonings each time, and generally I top with quite a bit of cheese.
I think bread crumbs might be a nice addition also.
