Easy & great, made the BBQ version. Only used 1/2 cup bbq sauce. I took leftovers to my grandkids and they loved them. The 5 year old ate four.

I have made the Meditteranean & Mexican versions of these. I have also added more spices to both. My husband loved these. We liked the Mexican the best. You need to really spray the muffin pan with spray oil or else it is a terror to clean afterwards.

I really like that it comes in little servings. A little greasy; next time I'll use a less fatty lb of hamburger.

Two of my children are VERY picky eaters. They almost always complain about what I put in front of them, and haven't eaten meatloaf in a very long time, until I made these meatloaves. I tried the Italian version of this recipe, and it was wonderful. I served it to my children and they loved it!! This is a very simple and tasty way to make meatloaf. I can't wait to try some of the other variations!!!

I make mini meatloaves in my toaster oven all the time,and one I like a lot, is one I put hard boiled eggs in the middle,and when you cut it, it looks so nice on the plate! Keep sending all the tasty recipes,and I will try them!

But I was wondering if ground turkey or chicken can be used for a heathier alternative.

I've never been a "make my meatloaf with stuffing" sort of person. However, this recipe was fabulous! Not only was it extremely easy, but it tasted wonderful! I made mine with ground turkey instead of beef and only 1/2 (~3 oz) the stuffing called for. I made the recipe that used BBQ with cheddar--yum! It even reheats well. It's a great way to minimize portions and freeze individual servings.

This recipe was super easy to make and it didn't take very long. My family loved it and we would certainly make it again.
