I think these recipes could easily be made vegetarian, by substituting soy protein crumbles for the beef. I love the idea of customizing for picky eaters by making easy variations in the recipes. Can't wait to try them.

EVERYONE loved this recipe. My husband was already creating ideas for the left overs for sandwiches in his lunches. I am so excited about how easy this was that I plan to make some for the freezer. This was so incredibly easy to make, fun and tasted great!

I was shocked at how great this recipe was -- how could something so easy be so great??? Unlike traditional meatloafs, the individual servings made there be more flavor to each bite --- very different than the ordinary full pan meatloaf. I can wait to try a different variation. I did the mexican style and added onion and chives to the meat. wow. I e-mailed it to all my firends.

I made the BBQ version and it was so awesome!!! Easy, quick, and oh sooooo tasty! Better than I ever expected! We are trying the italian one tonight with a little pasta on the side! I can't wait! Recommended to ALL!!!!!!!!

We used to eat spaghetti once a week. But, now we eat this!! It is THE BEST recipe I have ever gotten. My husband and I both love spaghetti and meatloaf, so the italian version is just perfect for us!!! Plus, making it in the muffin pan makes the serving size perfect for my young son!!!

I loved this! So easy and delicious. I sautéed bacon, mushrooms and onions to put in the center and it was very tasty!

Fun and easy, these mini meat loaves were a hit. I made the Barbecue version and we loved them. They are the perfect single serving size. I used Sage Stove Top, but next time may attempt to find a type with less flavoring. The sage didn't quite go with the barbecue sauce. However the stuffing itself makes a very moist meat loaf.
