Layered Fiesta Casserole

What You Need

lb. extra-lean ground beef

green pepper, chopped

red pepper, chopped

jar (16 oz.) TACO BELL® HOME ORIGINALS® Thick 'N Chunky Salsa

can (14-1/2 oz.) diced tomatoes, undrained

pkg. (10 oz.) frozen corn

corn tortillas (6 inch)

cups KRAFT 2% Milk Shredded Sharp Cheddar Cheese, divided

Make It

HEAT oven to 375°F.

BROWN meat with peppers in large skillet; drain. Return to skillet. Stir in salsa, tomatoes and corn.

SPREAD 1 cup meat mixture onto bottom of 13x9-inch baking dish; top with 6 tortillas, overlapping as necessary. Cover with layers of half each of the remaining meat mixture and cheese; top with remaining tortillas and meat mixture. Cover.

BAKE 25 to 30 min. or until heated through. Top with remaining cheese; let stand, uncovered, 5 min. or until melted.

Make Ahead

Assemble casserole as directed. Refrigerate up to 24 hours. When ready to serve, bake at 375°F for 40 to 45 min. or until heated through. Top with cheese; continue as directed.

Even my husband who is very picky loved this recipe. Not too spicy, but just enough kick. Very good.

At the time that I made this, I did not have any green peppers, so I left them out of the recipe. I used diced tomatoes with green chiles, and it gave it such a nice kick. We really enjoyed this recipe. It was easy to make, filling, and very tasty. Will definitley make it again.

Everyone in my family loved this recipe. I used medium salsa to spice it up and topped it with sour cream. It was super easy to make, even my 2yr old daughter helped. I'll deffinately make this again. Thanks!

This recipe was brilliant! My boyfriend and I love spicy/mexican food. I read the reviews before hand and lots of you said it needed more kick, so I used medium salsa and when I was browning my meat I added in some mexican chili seasoning. I used mixed veggies as I didn't have just corn laying around. I have to say this is our new favourite dish!! So easy to make. The flavour combo is amazing. Great for leftovers the next day too! This is a sure hit in our household!
