I made this for a luncheon for work. Gone in 10 minutes. Soooooooooooooo easy to prepare. Next time I will use hot salsa, instead of medium. Great

The hardest part of this recipe is chopping the peppers. Don't chop them too fine. I used red, yellow and green peppers and canned diced tomatoes with green chile bits for a bit of extra kick. The leftovers were great microwaved as well!

Extremely easy to make and the family loved it...there were no leftovers. Very similar to enchilada casserole.

We enjoyed this meal but it's kind of bland even though I used hot salsa and diced tomatoes with chiles. Next time I will add taco seasoning, garlic, and onion. It was a hit with the kids so I will definitely make it again.

My family are big meat eaters and so I used 2 lbs of ground beef instead of one. I also gave it some zip by adding a package of dry taco seasoning and it was a huge hit. We used home frozen corn and I could not find fresh corn tortillas in our market so I used tostado shells. Could not see any difference. I can't wait to make it again.

This was made for "company" and they loved it. At least 2 other ladies have asked for the recipe. It really needs hot salsa to give it zip!

This was so simple to make and delicious. Ingredients were easy to find--will definitely be making this again.
