My family loved this recipe which I spiced up quite a bit (we like it hot.) I added 1/2 onion to the meat/green pepper mixture when browning (I did not use a red pepper as they are so darn expensive!,) and flavored the meat mixture with dry taco seasoning (the hot variety.) I added a can of black beans and a can of original flavor Rotel using almost the whole can of tomatoes with chillis. I added under a tsp of cumin and used medium salsa instead of mild. When assembling the layers, I added a layer of sour cream flavored with dry taco seasoning. Due to the comments I read, I used 1/2 soft corn tortillas and 1/2 tortilla chips when layering although I will just use the chips next time for more texture. For the last 5 minutes of cooking, I raised the oven temp 5 degrees, added a healthy layer of shreadded cheese, and a final layer of crushed chips. The dish did turn out pretty hot (more so than probably most would like it,) but we love it spicy and hot! It was delish!!
