My family liked this, but next time I will change it a little bit. I used cut up chicken breast instead of ground beef, and made it the night before to pop in the oven after work. Super easy do-ahead! Next time, I may cut back on the corn a little and add some black beans.
I think the salsa I used (not Taco Bell brand) was not juicy enough or something, because while the casserole tasted really good, it turned out just a little dry (I didn't drain the canned tomatoes either). We topped it with just a little more salsa and a dollop of sour cream. Yum!
