This had great flavor, I added some taco seasoning to the meat and peppers after browning and also took someone else's suggestion and added green chilis. I also convinced myself it was somewhat healthy by using ground turkey!

This was very good. I made homemade salsa instead of bottled and it was really good. I will add sour cream the next time I make it.

Very easy and quick! The hardest part was cutting up all the veggies! I would probably add just a bit more cheese, but overall this was great, and I am NOT one to cook often!

This is super easy, and tasted great! I altered it slightly by adding black beans, used canned corn since it was what I had on hand, and Rotell instead of diced tomatoes for a kick. Recommend for busy moms!

My family liked this, but next time I will change it a little bit. I used cut up chicken breast instead of ground beef, and made it the night before to pop in the oven after work. Super easy do-ahead! Next time, I may cut back on the corn a little and add some black beans. I think the salsa I used (not Taco Bell brand) was not juicy enough or something, because while the casserole tasted really good, it turned out just a little dry (I didn't drain the canned tomatoes either). We topped it with just a little more salsa and a dollop of sour cream. Yum!
