I would not make this dish again. The stuffing ends up being very dry and the bottom of the pan is nothing but mush.
They didn't like the taste of the frozen veggies and the mixture of ranch and the creamed corn wasn't good. There was also a ton of juice/mush on the bottom of the dish. I would use regular corn and would change it to fresh veggies. I'll try this again in about 6 months with some changes to see how it goes.
This recipe was very easy--I definitely like one-pot dishes that I can rely on. It was very tasty too--I added fresh mushrooms to the vegetable mixture, and also rubbed a few cloves of fresh garlic over the chicken for added flavor. This was really good!!!!
No leftovers! Quick & easy.
this is one of the best recipes that i have tasted in a long time. especially being low fat.
