Made it for myself and substituted chicken in place of beef. would use a little less peanut butter though. i used different veggies and i think it would be very good with zucchini!

This was really easy and tasty. My husband surprisingly loved it loved it. I made a again with a bag a mixed stir-fry frozen veggies, not quite as good but OK and even easier.

My husband is very picky and he LOVED this recipe. I will for sure cook it again! I used a frozen bag of snap peas with carrots, onion and mushrooms and I tripled doubled the sauces. hmm hmm good! Add some eggrolls and bam...asian dinner served in less than 45 minutes.
I really like this recipe for a quick weeknight meal. I use light Italian dressing instead of Catalina and it works out quite well.
My husband and I have made this recipe many times because we like it so much. Although it calls for green onion, we leave it out because we don't really care for it too much. It is just as good without it.
Leave it to me to do substitutions: I used chicken instead of beef; didn't have peas or peppers, so used frozen stir fry vegetables; didn't have Catalina, so used italian. It's practically a new recipe, I just wish there was more sauce since I think I made too many noodles (1 lb) It was good, I just craved more peanut taste--and didn't go out to buy peanuts.
I made this for my family and everyone loved it. Two thumbs up!
GREAT quick dish! I double the sauce ingredients (Catalina dressing, peanut butter and soy sauce) because my family likes lots of sauce. I do add 1/2 to 1 t. of Chinese five-spice powder and 1/4 to 1/2 t. of red pepper flakes to the sauce. YUM!!!
