I doubled the recipe, but i didn't have enough italian dressing on hand so i used a little of the catalina dressing. (Won't do that next time) I used 1 1/2 cans of stewed tomatoes, 1 cup of black beans, 1 cup of corn and 6 slices of ham. I also added more hot sauce than recommended (3-4 tsps). Even threw in some red pepper flakes, salt and pepper. I cooked a little bit longer b/c mine was a little watery from the tomatoes. It was really good with the brown rice. My sister & I felt great after eating it, good healthy meal, will make again.

So easy and I even cut up the chicken into bite size pieces for kid friendly plates.

I used Rotel instead of stewed tomatoes and I added a clove of garlic.

Recipe came out a little heavy on the "sauce" but was otherwise very tasty.

This was good, nothing spectacular..next time I would probly add some cumin and chili powder or something like that just to give the flavor a punch, but something interesting and different for chicken.
