I have made this quite a few times and it has been great every time. I never use the ham, but we don't miss it. It's good if you add a little more hot sauce to it. The last time I made it I put in the whole can of beans instead of just a cup. It was still good, but there was less sauce (from the tomato liquid), which I normally enjoy. The chicken always takes longer to cook than the recipe says, but I've found that the stuff can stay on the stove for quite some time and still turn out great.

Wow! This had an awesome southwestern taste to it, not to mention how easy and fast it was. Everyone just loved it! I have more in my family, so I doubled everything except the tomatoes. Also, I used those little ham bites you can find in the meat section; worked great! Served with corn souffle on the side. Wonderful Meal!!!

I really did not enjoy this recipe. When I made it, it had a large amount of liquid from the tomatoes, and the flavor was very disappointing.

I made this dish but I replaced the ham with corn, which cut down on the fat grams, and for a little southwestern flavor added 6 oz of chopped mild green chili. It was delicious.

A great way to incorporate black beans into your diet. The meal is quick and flavorful.

I loved this, especially the rice. But my husband didn't care for the rice, preferring the chicken. It's worth trying, but definately Southwestern.

My husband loved this and said it was a keeper. I did use the Light Done Right dressing to lighten it up even more. Healthy and delicious.
