Substitute mashed calliflower for the potatoes. Amazingly delicious!

I used evaporated milk. I know it's a bit rich but we like our potatoes to be part of the meal, not a side.

I didn't have the cream cheese chive stuff so I used ranch veggie dip & it was so good. When I have all the stuff I'll make it according to the recipe exactly but what I did worked too!

This came out great! I served it with mesquite grilled chicken and our family couldn't get enough of it. Even my daughter who I can't ever get to eat mashed potatoes loved this!
