Cheesy Chicken Enchiladas

Very easy and delicious, my husband loved it. I used canned chicken and it turned out great. Try adding a bit of sour cream and a few sliced black olives on top.

It's tasty and easy, although I would add some mexican seasonings to it to give it a bit more of an enchilada flavor.

I used Campbell's Cheese Fiesta Soup instead of the chicken soup. It cut the cost of needing the extra cheese. Taste great.

My family loved the change.

I made this recipe in my electric skillet since I am temporary without an oven. It was a big hit with my family

This was a good recipie but I added my own variation because just plain cream of chicken sounded too bland. I used southwest nacho cream soup, and added red and green peppers n onions. Also, I added salsa instead of stewed tomatoes, and put it on right at the end with the cheese so it wouldn't get mushy. Oh and I added extra cheese inside so it was oooey goooey good! :D

Don't forget to spray the pan so the food does not stick.......

This is a really great recipe. I've made it for both friends and family and everyone comes back for seconds!

I got this recipie from my sister-in-law many years ago and we all love it. Sometimes I'll add a block of cream cheese to make it more creamy. It's a great recipie.
