I made this recipe for the first time to share at a co-worker luncheon. Everyone there said they enjoyed it and wanted the recipe. I think the next time I make it though, I would add a little less Peppercorn Ranch dressing, or maybe try just regular Ranch dressing. They were all shocked that it tasted so good and was low in fat/calories and also provides Vitamins A & C. A healthy side dish that actually tastes good?!
