I've made this dish several times. The first time the potatoes weren't cooked all the way after 40 mins. I now cook the potatoes in the microwave for about 8-10 mins before putting them in the oven. This helps to make sure they are nice and soft when they come out!

I read most of the reviews before making this dish. The suggestion of using Zesty Ranch was perfect. I was concerned about the baking time - so I made sure I cut the potatoes into bite size pieces. I also went on and baked it the day before and the heated it up, which I think helped. Everyone loved it - and it really is simple.

These are always a hit whenever I make them with dinner! I usually double the recipe so there is leftovers to take with lunch the next day!

We've made these potatoes twice, and both times the potatoes where not fully cooked after 40 minutes. Next time, we'll try cooking them at 400 degrees for 1 hour as suggested by another reviewer.

This recipe is a regular request from our family for get-togethers. I typically bake mine for approx. 1 hour to 1 hour and 15 minutes at 400 degrees to make sure they're tender. They always turn out perfectly. I've also used a spicy ranch dressing instead of regular ranch to give it a little more flavor!
