I LOVE this recipe. Simple and I can even get my kids to eat that "green stuff" because I chop the broccoli really small. It makes great left overs to take to work too!

I loved these! They are a little hard to clean out of the pan so I sometimes cook them on a cookie sheet. Definitely one of our faves!

Use fat free Ranch and Brown rice to make healthier...I liked how it got a little crunchy on outside! very good idea..I cant wait to make different versions of this ..maybe change up the veggie and cheese!

It was good, but rice got crunchy in the oven. I would use cheddar next time for more cheesy taste.

TWO THUMBS UP!!!! This recipe and also the Mini Meatloaf Recipe sounded so good and easy when I read the magazine. I immediately went and got the rest of the ingredients I din't have on hand (not many). Both were so easy to make and my family really enjoyed the change of pace. I work full time 40+ hours a week and still made this for an evening meal. Leftovers heat up well in the microwave also.

I made these for a Sunday dinner and had enough to have a couple for lunch all week. They reheat very well and taste just as good when microwaved for a minute or so.

This is a very easy recipe! I didn't have any chicken broth at the time I made it, but I just cooked the rice like normal and I put some Ms. Dash in it for flavor. The family loved it!!!

I thought the idea was great - a fun way to change up rice and a vegetable. They stuck to the pan, and didn't have much flavor.
