These are GREAT! I'm a huge fan of sweet potatos, but my husband normally won't eat them. Even he enjoyed these. I chose to cut the potatos into bite-size pieces and cooked a bit less than the full hour. I also added a bit of black pepper and extra dressing at the halfway point because they were starting to stick and burn a bit. I will definitely make these again. I think they'd be great with a bit of shredded cheddar on top.
