This is an excellent side dish for either pork or beef. The added color on the dinner plate enhances the meal.

I cook french fried sweet potatoes so my kids were excited on this new way! microwaved 1st and then baked and just added some oil and sprinkled with seasoned salt / or sea salt and they were pretty good!

I love the idea of another way to make potatoes, especially sweet potatoes. My family just didn't really like it. I liked the sweet potato ones for about 3 bites, then it got old. My husband and kids liked the white potato fries.

Just not quite what I'd imagined...(We used to eat fried sweet potatoes; guess I was expecting more)...but it was a good change of pace.

I took the advice of other reviews and microwaved the 1 1/2 lbs of potatoes first BEFORE cooking. For extra flavor I skipped the parsley and added rosemary instead. Family enjoyed it! Will make again.

The potatoes need to be microwaved first. I made this recipe as outlined,baked the potatoes for 1.5 hrs, they were still hard. My nephew said he loved them but he loves RAW potatoes.
