This recipe sounded and looked great, but ended up being a huge let down. I had to cook the potatoes much longer to get them soft enough to eat, and they ended up dry. The dressing dripped off the potatoes and burned the pan. And I guess I used the wrong parmesean, but it just ended up very hard. The baking potatoes tasted much better than the sweet, but the sweet potatoes tasted better outside of their very 'crispy' skins.
