Easy to make and leftovers are even better. Next time I make it I will use a medium salsa instead of mild.

This was very easy. I added a Tbsp or so of Chili powder and for the corn, I used one that was a Southwestern Flavor with onion and green & red peppers. Just the right amount of color! Also I used a medium salsa and pepper jack cheese to add some zing! My husband loved it!

Very good! Even my really picky son liked it. With the salsa and Mexican cheese it was a bit spicy...just a warning if you have young kids.

My husband and I both liked this recipe, but thought it was a little dry. When I made it the second time I added a can of diced tomatoes and it was better.

Because hubby is allergic to corn, I used a can of drained and rinsed black beans in place of corn. Think using a can of Ranch Style Beans would be good also!
