What You Need

NILLA Wafers, divided

1-1/4

cups sugar, divided

1/4

cup margarine or butter, melted

pkg. (8 oz. each) PHILADELPHIA Cream Cheese, softened

1/2

cup BREAKSTONE'S or KNUDSEN Sour Cream

tsp. vanilla

eggs

KRAFT Caramels

Tbsp. milk

1/2

cup chopped PLANTERS Pecans, toasted

Make It

HEAT oven to 325°F.

CRUSH 50 wafers finely; mix with 1/4 cup sugar and margarine. Press onto bottom of 9-inch springform pan. Stand remaining wafers around edge, pressing gently into crust to secure.

BEAT cream cheese and remaining sugar in large bowl with mixer until well blended. Add sour cream and vanilla; mix well. Add eggs, 1 at a time, beating on low speed after each just until blended. Pour over crust.

BAKE 45 to 50 min. or until center is almost set. Run small knife around rim of pan to loosen cake; cool before removing rim. Refrigerate 4 hours. Microwave caramels and milk on HIGH 1 min. or until caramels are completely melted, stirring every 30 sec. Cool slightly. Pour over cheesecake; top with nuts.

Prepare recipe as directed in 13x9-inch pan, increasing Nilla Wafers around edge to 22. Bake 40 to 45 min. or until center is almost set.

If using a dark nonstick springform pan, reduce oven temperature to 300°F.

I've made this s few times with monumental success. I did, however, cheat a bit & used a jarred caramel ice cream topping. This is the only cheesecake recipe I will make from now on, so many compliments everytime!

This cheesecake was AMAZING! I made it for a friend's surprise 21st birthday and there were hardly any leftovers! Although I did use off-brand caramels that were larger which gave me extra caramel sauce, we just saved it to top some ice cream instead so that the cake wouldn't be too rich. I do suggest baking it for a bit longer than 50 minutes though. It was so::: good; I highly recommend it!!

I made this cake for my family and they all thought I bought it! It turned out perfectly. It was very easy to make and I am going to make this again soon! I have never gotten so many compliments on anything.

This was the best cheesecake. I make this every yr for christmas, I have been making this for the past three yrs and I will continue making it for yrs to come and pass it on to my kids!!!
