What You Need

NILLA Wafers, divided

1-1/4

cups sugar, divided

1/4

cup margarine or butter, melted

pkg. (8 oz. each) PHILADELPHIA Cream Cheese, softened

1/2

cup BREAKSTONE'S or KNUDSEN Sour Cream

tsp. vanilla

eggs

KRAFT Caramels

Tbsp. milk

1/2

cup chopped PLANTERS Pecans, toasted

Make It

HEAT oven to 325°F.

CRUSH 50 wafers finely; mix with 1/4 cup sugar and margarine. Press onto bottom of 9-inch springform pan. Stand remaining wafers around edge, pressing gently into crust to secure.

BEAT cream cheese and remaining sugar in large bowl with mixer until well blended. Add sour cream and vanilla; mix well. Add eggs, 1 at a time, beating on low speed after each just until blended. Pour over crust.

BAKE 45 to 50 min. or until center is almost set. Run small knife around rim of pan to loosen cake; cool before removing rim. Refrigerate 4 hours. Microwave caramels and milk on HIGH 1 min. or until caramels are completely melted, stirring every 30 sec. Cool slightly. Pour over cheesecake; top with nuts.

Prepare recipe as directed in 13x9-inch pan, increasing Nilla Wafers around edge to 22. Bake 40 to 45 min. or until center is almost set.

If using a dark nonstick springform pan, reduce oven temperature to 300°F.

I have made this cheesecake for the past 3 years for my family Thanksgiving.(Since it came in my Food & Family Mag) This year I was wathcing the Food Network and Tyler Florence was making his "Ultimate Cheesecake". I decide to try that recipe instead for Thanksgiving. Everyone agreed this one was better. (It is alos WAY easier) Sorry Tyler-I'll stick with this one!

This was so yummy! It was my first baked cheese cake and I am so proud of the outcome. It was better than the cheesecake at my favorite cheesecake restaurant! My husband wants me to make it every week. I will definitely make it for Christmas parties.

This cheesecake was a big hit for Thanksgiving. It went before any of the other desserts. Very easy to make. Made it two days in advance. Put the topping on the night before. Highly recommend this cheesecake recipe even for a beginner like me.

I am interested in making this cheesecake. How many wafers did you place around the springform pan? It looks like 16 whole wafers were placed but how about the wafers on the bottom? The wafers on the bottom look like they were cut and shaped and placed between the whole wafers.

This is the first cheese cake I have ever made and it was wonderful! Not only did it taste great but it looked great too! Everyone was very impressed with it and I was very happy to serve it to my family!

This is my all time favorite cheesecake recipe! My family requests it on every holiday and for birthdays! The nilla wafers are a wonderful change to the traditional graham cracker crust.

A very easy cheesecake to make! Turns out looking very elegant and tastes terrific! I will definately make this again and again. The Nilla wafers make a better crust than graham crackers, in my opinion.
