You can also try rubbing yellow mustard all over the roast. Brown mustard is wonderful too. I have been doing it like this for years!

Got this one from the 2006 calendar in time to make it for Thanksgiving. It was the hit of the night, so much so that we had to make it again for Christmas eve - a smaller group, and it was the turkey that got cancelled. The beets are incredible, and even if you're not a fan of beets, put them in this recipe. While cooking, all that beet sugar permeates the meat and makes it incredibly sweet and delicious. I would recommend pre-cooking beets from the produce section slightly, however, as the cooking time for the meat isn't long enough to get large raw beets sufficiently soft. Pile the veggies over the meat to add tenderness and be sure to drizzle the pan juices (they'll be purple) over the meat before you carve it, and after, and after you put some on your plate.

I liked the flavor of the dressing in the potatos, carrots, onions and pork roast, I did not use beets, as DH does not like beets as I do. I would make it again, and DH approved it too.

It was easy, delicious and my 15 year old daughter, who is very picky, asked for seconds! I am going to pass this one on - I did put garlic inside the roast and sprinkled the whole thing with a little fresh parsley for color.

Even my most picky 7 year old son loved this recipe. He declared it "The best meal ever". The meat and vegies were tender and tasty, I left out the beets and added chunks of onion and cloves of garlic. This is something I would make when inviting guests over as well. A very good meal indeed!
