We ate it on the tricuits and then topped the grilled chicken with it. Too good!

I took this salsa to work and it was a hit! Everyone loved it and asked for the recipe. I actually tweaked it a little and added a chopped green pepper, chopped pineapple, minced garlic and cilantro in place of parsley. It turned out great!

My book club loved it. I doubled the recipe and it disappeared before we were done. They loved the mix of onions with the sweetness of the mandarin oranges and the tang of the italian dressing.

Super easy and yummy! I left out the onion and it was still great. I can make this in about 5 minutes, and kids even love it! Substituted tortilla chips instead of crackers.
