I made two of the quiche for a brunch I had for my family. I was amazed that everyone liked it including my husband who doesn't like spinach. I will put this one on my list of foods to make when taking something to a friends house. It was so easy and that's what I like...easy recipes.

I used lowfat or fat free whereever I could and saved 110 calories per serving! I used frozen chopped broccoli instead of spinach though. It was very good and my picky 4 yr old even liked it. He thought it was cool that we were having "pie" for dinner!

This recipe was great. But I substituted chopped frozen broccoli in place of the spinach(because I didn't have any) and it came out great.
