I made this for mother's day and it was a big hit. I used onions instead of red peppers.

I prepared this the night before and baked it in the morning. It turned out fantastic. My guests were fighting over the last piece! Well worth the little effort needed to make.

This recipe was approved by many friends/family who didn't normally like/eat spinach. It was wonderful with more bacon added and onions, too. Extra tobasco on the side adds pep. I used this during the holidays and at work social. Everyone was very impressed, and the puff pastry sheets were so easy. I now use the pastry in many other dishes, too.

This is a great breakfast/brunch recipe! The picture here doesn't do justice to the intensity of the colors - the green of the spinach flecked with the red of the red pepper. This was the first time I had ever used the frozen pastry sheets, but it was so easy, and very impressive looking. It is a refreshing change from the typical breakfast quiche/casseroles that all seem to have the same ingredients. I will be making this again before then, I'm sure, but I defintely want to have this during the Christmas Holidays because it is so festive looking. I highly recommend this recipe!

This is not only delicious, but is impressive when it comes out of the oven. I feel it does need a little salt -- 1 tsp.

Delicious!!! It tasted as good as the picture looked! It was very easy to make. I made it for Easter and my family loved it. Next time I will use a lot more hot sauce, and it will be perfect.

I made this for Easter brunch yesterday and everyone went crazy over it. I've been told I will make it again, and often, by my husband. I don't like cooked spinach, so I didn't try it, but from what I heard, I'll do this again.
