These pumpkin bars are "too die for". My hubby and I loved them. I can't wait to share these with friends. In addition to being very delicious, they are very nutritious. This recipe is a keeper.

These were a huge hit with my family at a recent gathering. I'll definitely be making again for Thanksgiving. The recipe makes enough for two 8x8 pans, which is what I used. The filling was creamy and delicious and the topping was sweet and crunchy.

These bars are fantastic for fall and make the house smell wonderful. I realized I only had 1 stick of butter left (not 1.5 sticks), so I used what I had and added about a tablespoon of canola oil. The crumb crust/topping was perfectly moist and I saved the calories & fat of a half-stick of butter. I used reduced-fat cream cheese as well. Still a treat but less sinful!

I make these every year at Thanksgiving. They are so delicious. Just make sure you put them in cupcake papers if you cut them put them in a platter, otherwise they will all stick together.
