PHILADELPHIA Neufchatel Cheese

Make It
COMBINE
first 4 ingredients.
SPREAD
crackers with Neufchatel.
TOP
with tomato mixture.

Make Ahead
Prepare tomato mixture as directed. Add Neufchatel; mix well. Refrigerate up to 24 hours. Spread onto crackers just before serving.
Substitute
Prepare using TRISCUIT Reduced Fat Crackers.

Very good and simple to make. I added a little more salad dressing to the tomato/onion mixture. A little chopped fresh basil and balsamic vinegar would be good in there also. Very easy to make variations to suit your taste.

Did not have any Triscuits on hand but used another cracker and it was still amazing.

This was a big hit at my Book Club meeting. I used sweet red onion instead of the green onion and added some chopped fresh Basil. Go ahead and double the tomato topping part of the recipe. It's delicious the next day too.

These are so simple, but SO GREAT!!!! I don't really care for tomatoes, but I ate more of these than anyone else at the shower!! :-)

This is such an easy appetizer, and I love that you can use low fat toppings. The triscuits make the dish crunchy and flavorful and blend well with the veggies and cheese toppings.
