COMBINE
first 4 ingredients.
SPREAD
crackers with Neufchatel.
TOP
with tomato mixture.

Make Ahead
Prepare tomato mixture as directed. Add Neufchatel; mix well. Refrigerate up to 24 hours. Spread onto crackers just before serving.
Substitute
Prepare using TRISCUIT Reduced Fat Crackers.

Ive made these 3 times this week and a double batch for easter appitizer. they lasted about 5 mins even my kids snarfed them down ... The Batch size was way off for me though. but then again i loaded mine up pretty good. Delish !

I substituted the fat free mozzarella with real mozzarella cheese and instead used fat free cream cheese. It was delicious, my husband loved it!

Very good. The crackers did get soggy after being out for awhile but they were still deliciious.
