It was alright. I think next time I'll puree it because it still seemed like cauliflower, rather than mashed potatoes that its sapposed to substitute for. It also seemed very watery too. Maybe next time I'll steam it.

I love this recipe! The only thing I did differently was I steamed the veggies. Less water absorbtion and hopefully for nutritious. I've also made this with feta cheese and garlic instead of the dressing. Yummie!

I love this recipe! I used fat free ranch dressing and it really gave the cauliflower a nice flavor. Definitely a good alternative to regular steamed vegetables.

After reading the first comment, I decided to steam the veggies, rather than boil. I steamed them for about twice as long as I normally do, and the recipe was wonderful. My husband loved them, and my teenage son asked me to make another batch the following nite. Thank you!

I blanched flowerettes, left them whole then marinated for several hours and served cold.

Don't boil it .Instead steam it with 2 tomatoes. You will have all flavor and nutritions

I don't normally rate a recipe, I just don't make it again if it is not very good. The cauliflower came out extremely watery. I needed to press it to release enough water to add the dressing. Boiling the cauliflower diluted all of it's natural flavor (as well as the vitamins). I will never make this again!

I just made it tonite for dinner, and it was a hit... I had my son taste it and he is one picky eater for Veggies and he even liked it... This is going to be the way I cook smashed potatoes from now on, I am doing weight watcher and I am going to share this with everyone... I use reduced fat sour cream, and no fat Cheese mixed with a bit of reguler cheese, and added a pinch of salt and pepper to add to the GREAT taste.. Thanks, Marcy

This is one way I can get my children to eat their vegatables!! Instead of the dressing, they like it with just butter, a little shredded cheese and pepper. I serve this about once a week always trying different variations I can think up. Add chunks of chicken breast after mashing for a quick and easy dinner that eveyone will like.
