I had always made mashed cauliflower by cooking it in the mircrowave. Then putting it in food processor with fat free half and half, I Cant believe it's not butter, crushed garlic and pepper. I cant wait to try some of the other versions I saw in the comments!

I use fat free cream cheese, a little bit of light sour cream and dry packaged italian dressing (I don't like ranch). It's just as good and adds a different flavor.

I have not made this recipe but a slightly different version. I steamed the cauliflower after draining I put it in the food processor along w/ 1/4 cup mayo and a clove of garlic, and a pat or 2 of butter. Awesome!!!

I have also made this using 1/4 cup of mayonaise instead of dressing. Can also add 1 clove of garlic to the water to flavor.

I have also used Cream cheese, Heavy cream, and sour cream with other seasonings. Great Low Carb Version to Mashed Potatoes!

This is a staple in our low-carb diet menu. Suggestion: instead of boiling the cauliflower, steam it. It will retain less water, which comes out when mashed. If you don't have a steamer, cook as directed, but once you drain the cauliflower return to the pan and place over low heat and mash while heating (causing the excess water to evaporate). Remove from heat and add additional ingredients.

My family really enjoyed this dish a change from potatoes, but instead of ranch dressing I used shredded parmesan cheese. really good

I have also made this mashed cauliflower recipe with South Beach Diet using nonfat half & half and I can't believe it's not butter...

tasty- a nice change from regular mashed potatoes and a great way to doctor-up cauliflower
