This wa not easy but was good. I used low sodium Stove Top Stuffing and a lower sodium salad dressing. Delicious. Gettingthe chicken to roll up and look pretty did not work for me. Like another reviewer, I had extra stuffing. I think that the stuffing mix/spinach combination makes a great side dish - healthier than just stuffing.

I made this recipe for dinner the other night and it was amazing! I only made one change....I bought thin cut chicken breasts instead and cooked the chicken for about 5 mintues less since the chicken is thinner. This is a new favorite!

this was great though I made some additions to it. I seasoned the top of the chicken with onion powder and salt instead of dressing. Dressing never works for me as a seasoning. I added a slice of american cheese inside the chicken and it was delish.

I gave this recipe to my niece and she stuffed it with mixed vegetables instead of stuffing. Very good, less calories and healthier.

I made this using 2 chicken breasts (that were really stuffed) and used the extra stuffing mixture as sidedish/bed for the chicken once I took it out of the oven. It had a great flavor. Next time I make this I plan to place the extra stuffing in a pan and bake it with the chicken so it comes out nice and crispy. Also I would like to add some extra salad dressing (cut with some water) to the pan while the chicken bakes, it made a nice topping once everything was plated. I did not use an entire 10 oz of spinach because it seemed like it would be too much (I love spinach, but there was no way 10 oz was going to wilt down all that much in 5 minutes). Overall this takes a little longer to make than planned - give yourself about an hour - and don't forget the cheese at the end!

This was delicious. I didn't have roasted red pepper italian, so I used light zesty italian and it was still delicious. I also used the whole wheat stuffing, to try to stay as healthy as I could. My 2 year old ate an entire small chicken breast, spinach and all! I served it with roasted asparagus.
