This is a great and easy dish. I planned on cooking it when I got home, but my husband saw my recipe laying out and decided to cook it himself to surprise me for dinner. It was simple enough that he had no problems making it. I'm not a spinach lover, but this was delicious. We'll definitely add this to our list of frequent meal ideas.

This was an EXCELLENT quick meal that I enjoyed immensely. Granted, I had to make a few minor modifications...I replaced the stuffing with bread crumbs and added cheese to it...but it was so tender and yummy! My friends thought so too and finished off my leftovers...

This recipe was easy to follow and the outcome was delicious! I would defiantely make it again! I overstuffed my first chicken breast so it wouldn't roll correctly. After I took a little bit out it rolled much better.

The chicken melts in your mouth and the stuffing is so flavorful. I used jarred roasted peppers, not fresh and used my food processor to chop up the spinach making this a quick and easy meal.

I made this last week for my boyfriend and I and it was wonderful. Even tasted great heated up the next day. My boyfriend (who went to culinary school) tells me that a lot of the food I cook does not have much flavor, but he told me to make this one again!!!!

Even though I watched the "how to" for preparing cutlets, I still found it difficult and clumbsy. You absolutely need toothpicks. That aside, they were very tasty and juicy. Probably would not make again.

I added red pepper flakes to the stuffing/spinach mix. It turned out very tasty, my husband couldn't stop raving about it!!
