We loved this! I used wild rice and cubed chicken thighs. I didn't use the tomato or cheese. It was wonderful without these. My husband tends to drown meals he doesn't like with cheddar cheese - so I didn't want to encourage him. It was very flavorful and creamy.

the only thing I did't like was the tomato's, they tasted kind of weird cooked. I LOVE this recipe!

I've made this recepie several times for my family. Kids and hubby love it! We add a can of drained black beans & some cilantro.

This was such an awesome meal. Even my husband who doesn't like mexican dishes ate seconds. A great twist: instead of just topping it with cheese, melt shredded cheese and sour cream together and make a sour cream cheese sauce to top it off.

I made this recipe except I used bone-in chicken breast and regular brown rice so I had to use a little more water and cook a little longer, but this tasted great! Will definitely make it again.

I have never cooked before and I thought to myself if this is cooking it is so easy. It tasted great too. I would definitly try it again. I did thought brown up the chicken first and add some garlic salt to it.

It was simple and quick, but my husband thought the rice was missing something...like it was trying to be Spanish rice but wasn't. I'll play with it though and find the missing ingredient. It's really good with black beans and frozen corn stirred in, too.
