I made this for dinner tonight with a few changes to make it more healthy: I used brown rice and 2% milk. I also used a few garlic cloves instead of onion and part chicken broth and part turkey broth because it's what I had on hand. I used more broth than the recipe called for and I "blended" the batches through a food processor instead of a blender. Easy to make and yummy!
This was really good soup. I loved the consistency. I used skim milk and there was still a rich flavor. The pepper gave it a really nice bite, also. I added salt because I did feel that it needed a bit more flavor, but overall, I thought it was a great soup. Would definitely make again.
Great for a winter day! I used instant brown rice and it was very good. I might try adding a clove of garlic next time.
I am surprised at how many good reviews there are for this soup, because I found it to be completely BLAND. I wouldn't make it again. After I had a bowl and found out how bland it was, I actually added 2 cups of pureed peas to it to add some flavor.
I hate to waste food and have been looking for a way to use up the large stalks that I cut from the broccoli. I have been peeling them and julienne them to make slaw out of them. I think next time I buy a boatload of broccoli, I'm going to try making this with the leftover stalks, since they get blended anyway. I just may have to strain it afterward.
Makes this soup every year for our church soup supper. Always a hit!
This is a very easy to make soup. It has a terrific flavor. I serve it often.
I have made it both with broccoli and asparagus and my husband and I loved it. It is easy and delicious.
