No-Cream Creamy Broccoli Soup

No-Cream Creamy Broccoli Soup recipe
There’s more to this better-for-you soup than the name suggests. Like four flavorful veggies, rice and savory grated Parm. A warm, smooth, satisfying bowl of goodness.

This soup is oh-my-gosh good! I liked it when I made it fresh, but thought it was even better as a leftover. I added a lot of black pepper to it and extra cheese for my leftover lunch.

I rated this superb because my 7-year old daughter LOVED this (which is saying a lot!). She even helped herself to a second bowl! It was easy, and I loved the taste and texture... We are trying to eat healthier, so I was happy to get creamy soup without the cream. Fabulous!

I've never had broccoli soup before, but I decided to try this receipee. It took a lot of time and made a mess...it required using a lot of kitchen ware. The receipee itself wasn't very appealing. It looks as good as it tasted...very bland and mushy.

We enjoyed it, and it was an easy way to disguise veggies for my husband. I'm going to freeze the leftovers in individual containers. If this works, I'll make it again. Otherwise, we had too much left over, and I wouldn't want it 2-3 days running.

It was pretty good, but I would have liked for the broccoli pieces to be bigger, and I was unsure if I liked the rice in with the soup.

Added some garlic powder to the oil and some pepper to final product. I also thickened slightly with some corn starch paste. I'm not sure what that does to caloric count, but it made the texture creamier. This is a wonderful recipe. Great taste and a great way to get added vegetables during the day.

I thought it was very good. I did make one substitution to make it healthier: I used brown instead of white rice.

I made this recipe once and liked it. Then I read reviews on Kraft's page and saw one where the reviewer had added shredded cheddar cheese to the soup in addition to the ingredients listed on the recipe. I tried this and liked it even better. It adds flavor and texture to the soup. I stored this recipe and it will be a regular during cold months.

This soup is a meal. My 8-year-old and 4-year-old love this soup. I have already made an extra batch to freeze for a quick dinner.
