No-Cream Creamy Broccoli Soup

There’s more to this better-for-you soup than the name suggests. Like four flavorful veggies, rice and savory grated Parm. A warm, smooth, satisfying bowl of goodness.

What You Need

carrots, chopped

stalks celery, chopped

onion, chopped

Tbsp. oil

cans (14-1/2 oz. each) fat-free reduced-sodium chicken broth

1/2

tsp. pepper

4-1/2

cups broccoli florets

1/2

cup instant white rice, uncooked

cups milk

1/4

cup KRAFT Grated Parmesan Cheese

Make It

COOK and stir carrots, celery and onions in hot oil in large saucepan on medium-high heat 5 min. Add broth and pepper; stir. Bring to boil.

STIR in broccoli and rice. Simmer on medium-low heat 10 to 15 min. or until vegetables are tender, stirring frequently.

ADD soup, in batches, to blender or food processor; cover. Blend until pureed. Return soup puree to saucepan. Add milk and cheese; cook until heated through, stirring occasionally.

Substitute

Substitute 4 cups frozen or drained canned peas, chopped asparagus or chopped leeks for the broccoli.

I can never make a recipe the way it is I wanted a cheeseier soup so I omitted the rice, and I added 3Tablespoons of corn starch to thicken it, and added another cup of grated cheese to it. It was so good my husband who is not a vegetable person wanted me to make it again

The soup is delicious. Although I did make a few substitutions! I used skim milk instead of whole milk, and brown rice in place of white. It wouldn't hurt to add a little minced garlic along with the onions. You can pair this with a salad and have a satisfying yet healthy meal.

Quite good. I found it had a lot of flavor. I used half the olive oil and only 1 cup of skim milk but next time I'll omit the milk all together. Since I wanted more texture, I didn't blend all the soup though. Served with salad / cornbread. Very Good!!

was disapointed did not have much of a taste. used chedder cheese didn't melt/blend right. would rather it have been creamier with cheese

This was a very quick and easy soup recipe to make. No special ingredients needed, which is always nice. I did at salt to it as well as more pepper than the recipe called for. If you have an immersion blender, it's much each to make. If you're into making soup, I recommend you get one.

My four year old is currently refusing to eat vegetables. He eats this just fine. Its buttery and smooth and he just gobbles it up without realizing that its made almost entirely of vegetables.
