No-Cream Creamy Broccoli Soup

No-Cream Creamy Broccoli Soup recipe
There’s more to this better-for-you soup than the name suggests. Like four flavorful veggies, rice and savory grated Parm. A warm, smooth, satisfying bowl of goodness.

I added sharp cheddar cheese, a little garlic, plus lots of fresh ground pepper. I like my soup chunkier so I used an emulsifier and pulsed it slightly. This was a little bland for me, but my husband really enjoyed it.

I didn't have any carrots, and delicious all the same. Remember to pulse your soup, not puree it, this makes a big difference in giving your soup a chunky texture. I did not find this soup bland at all, as some reviewers stated. Excellent!

This soup was very bland. Careful in the blender--it pulvorizes everything to look like split-pea soup instead of broccoli soup. We had to keep adding salt and pepper.

This is very good I loved it and it was even good as leftovers. Next time I probably won't put it all in the blender, so that it will still be kinda chuncky

The soup is good, very healthy. I added a teaspoon of chicken broth concentrate and garlic pepper. The soup is thin, thinking of addding a small potato next time. I wonder how it would taste with some cabbage.

I love this recipe! I does take longer to make than state though. I made two batches and froze them for cold winter nights and quick lunches!

I made this with all except the celery. It was good, but kinda plain. My hubby loved it though, and there is only a small bowl left this morning. My 2 year old son also really enjoyed it. I will make this again, next time adding more spices.

Just needed more salt and pepper, kinda bland. Also not extremely filling, great for a lunch or light dinner. Myabe serve with Bread and Salad. Definitely use fresh broccoli over frozen (even if it is thawed). Fresh Broccoli is softer and puree's easier.
