YUM, YUM, YUM! Very tasty. I added a bit of garlic, salt and pepper. Made it with broccoli and not peas. Not a fan of peas. Very good the next day for lunch as well.

I made a few modifications and LOVED it!! I used 1/4 of a yellow pepper, 4 stalks celery, 1/4 cupped chopped onion, minced garlic and brown rice. It turned out amazing!

first off i used butter spray instead of oil,it cooked the vegggies just as well, I also used green bell pepper insted of red, I also used vegetable broth instead on the chicken. It was very good and very moist. It made to much for two people, the next time I will cut the recipe in half. It was a great side dish for grilled steak. Will make again

Use the chicken broth for sure, it makes the rice moist, and it keeps for leftovers longer! My family thought this was delicious!

Using the chicken broth really makes it great. All of the vegetables add color, texture, and extra flavor. Definitely easy.

My husband loves this recipe and requests it often. I love the fact that it can be made with such simple ingredients. I add a cooked cut up chicken breast and a little more broth. Although, he would eat it up all in one meal, I stretch it out, so we can enjoy it the next evening for dinner!
