Warm Winter Lemon Cake

Warm Winter Lemon Cake recipe
Gently falling snow, good. Unrelenting icy rain, not so much. Tame winter with a forkful of lemony sunshine in a warm, moist pudding cake with a citrus tang.

I will try this recipe again, however, I will use a lemon cake mix instead of yellow and cut out the sugar in the pudding. I put some lemon zest in the cake mix as well as the pudding but still not lemon enough. The cake was extremely sweet, even for me.

This is a very quick dessert to make and I'll make it again. But, I will change to things. The first is that it is indeed to sweet so I will cut down on the sugar in the pudding and the other is that I would like it a little bit thicker. So I'll try cutting down on the liquid in the pudding as well. Other than those things, it was great. My daughter helped me make it and she loved putting the pudding on the top and then seeing it on the bottom after it was baked.

I used sugar free pudding and Splenda Blend in place of regular sugar. Took it to work for a carry-in and had rave reviews. Can't wait to try a chocolate/chocolate pudding version.

I used Golden Vanilla cake mix, since I already had that. I also used sugar-free lemon pudding. It was excellent!

SUPER AMAZING! I'd cut out some of the sugar that was mixed into the pudding, but other than that, OH SO GOOD!

My whole family loved this recipe - especially my 5 yr old son who now wants this for his birthday cake. We tried some variations using half vanilla, half lemon pudding, and using butterscotch. Our favorite is the vanilla lemon combo. Great warm or cool. Try this recipe.
