Warm Winter Lemon Cake

Warm Winter Lemon Cake recipe

Gently falling snow, good. Unrelenting icy rain, not so much. Tame winter with a forkful of lemony sunshine in a warm, moist pudding cake with a citrus tang.

Bake only 50 min. Be sure to put the baking dish on a jello roll pan--it definitely spills over. It was excellent. My husband had 2 servings!

this was wonderful. Because there is only 2 of us I downsized it using one half of the batter and 1 box pudding, putting it in a round cake pan. Took about 45 minutes to bake. Made cupcakes out of remaining batter. I also used the cooked pudding i already had. Didn't take much longer since I micro-cooked it and came out great.

Heavenly! Followed instructions exactly. Still jiggled in the center after 55 minutes bake time, so baked an additional 12 minutes or so. Came out less jiggly and after 30 minutes cool time was perfect. They wanted seconds. Yummy!

This cake is wonderful. One of the best I have ever made. I've made it 3 times so far. Definitely a keeper. I'm anxious to try this with different flavors. But the lemon will be hard to beat.

This was lovely. We ate this for dessert after roast beef. I thought I might be a bit heavy after such a large meal, it was wonderful. It was very light and refreshing, I think I will try it with the lemon cake mix next time. Such an easy recipe.

I loved this cake, but the middle didn't bake completely. I used a Pyrex 13X9 dish and baked it for an hour. I was afraid to bake it any longer because the edges were getting pretty brown. Does anyone have any suggestions? I'd love to make this cake again.
