The key is marinating the beef -- I've never had such tender beef in a stew before! I had to add more beef broth than the recipe called for, and I also cut back on the carrots and added parsnips, as well as some oregano and garlic. And grated some fresh parmesan on top just before serving. A definite new staple recipe in my kitchen!

My husband loved it!! Although to me it tasted just like the stew I usually make so I don't see the difference there. It was really good though!

It was easy, and everyone in the family enjoyed it. My husband and I are working through his cancer and some things just don't always taste good to him. This stew was great and he is anxious to have it again--and so am I.

This stew was amazing! I would make it again. I had used a redwine vinegar and olive oil and black pepper marinade. The stew tasted like it had been cooking all day!

I have never made beef stew before but this was SO easy and my family LOVED it!! My husband is already requesting it again.

This stew is very tangy and zesty. It thickens itself nicely without having to use flour and butter. The mushrooms are a wonderful addition.
