The salsa part was a little weird. I found myself missing real enchilada sauce, but I guess salsa is healthier. Overall, would make again.

Our family loves this recipe! I always use flour tortillas instead of the corn. Also, use a variety of peppers. I have made this with venison burger (added seasonings) and chicken and it's wonderful with both. I do like the idea of one posters advice of adding enchilada sauce. Will try that next time!

This is a very easy dish. I made some changes, instead of beef I used ground turkey and I sauteed the peppers before adding them to turkey. I will make this dish again. Yummy!!!!! ;)

Sounds Wonderful. Instead of ground beef, I am going to use left(planned) over roast beef. That's dinner tonight!!

It was good, kids loved it. i made the veggies separately because the kids dont like them. I also but i packet of taco seasoning in with the meat.

This was soo good and really easy! It's great for a weeknight meal that seems like you cooked it forever! The only thing that bothered me was that the corn tortillas broke even though I heated them. It was still good and everyone enjoyed them!

Fabulous! I made these changes; I sautéed the peppers on the skillet until they were softened before adding the ground beef. I added taco seasoning and fresh cilantro to the mixture as well. I used enchilada sauce on top of the enchiladas, as well as a little salsa underneath and on top. After baking, I added more fresh cilantro with the cheese on top.
