Very tasty. It is the kind of recipe that promotes togetherness in the kitchen, too. My husband and shared the preparation. After I prepared the filling and the tortillas, he did the filling and rolling. And a good dinner was enjoyed by both of us with leftovers for another meal!

This is one of the best enchilada recipes I've ever tried. The italian dressing is like icing on a cake, gives it the best flavor!!

We love this recipe and it is so easy! I use flour tortillas and extra salsa.

These are great! I've made them over, and over again. You can even freeze extra beef and pepper mixture for a quick fix next time.

The corn tortillas are an absolute headache to deal with. Not sure if it would be suitable to use flour tortillas as it would be too soggy.

So yummy!!! I always have trouble getting my corn tortillas to stay soft, the directions for these tortillas did the trick. They were super easy to roll.

LOVED this one. Made them for the family and sent some to my father in laws. He didn't believe they were healthy and tasted so good. I used a can of mild rotel on top instead of salsa. Gave it a little extra kick.

used a different salsa, used medium.Turned out pretty spicy.Added sour cream,helped.

The first time I made this recipe, I used ground beef. My husband loved it although he doesn't like ground beef that much. The other times I've made it, I have used shredded chicken instead of beef and included corn and black beans, also whole wheat tortillas and they still turned out delicious!

I made these enchiladas and I thought they were very good. I added an onion and extra cheese and salsa, my husband didnt care for them too much.
