We cut out a little of the meat, upped the veggies and used better-for-you ingredients to trim calories and fat from this enchilada dish. What we didn’t trim was flavor.

I used six 10 inch tortillas because I thought 1/4 lb per 6 inch tortilla was too much filling.

Very good and extremely easy to make! Will definitely make again. After heating my tortillas, I dipped them in light zesty italian dressing and then stuffed them! Adds more flavor to the overall dish and helps the tortillas from not cracking!

I thought this was ok. Something different. My husband seemed to like it very much. As for me I prefer traditional enchilada sauce. But overall taste was good. I did add a little bit of taco seasoning and granulated garlic, onions and garlic, and probably 2x the amount of veggies.

Very, very good; easy enough for my husband to make :-) He substituted ground turkey and flour tortillas though.

I've made this recipe several times, and I love it! I prefer to use flour tortillas, because the corn ones tend to fall apart when I'm rolling them, and I usually omit the italian dressing.

I added salt, cumin and chili powder to the meat mixture and used only red peppers. I only had flour tortillas and they were bigger so I used only 4 and added extra beef to the tortillas. Next time I would not brush dressing on the tortillas because they ended up being a bit soggy but overall was a tasty dish. I served it with spanish rice.
