We cut out a little of the meat, upped the veggies and used better-for-you ingredients to trim calories and fat from this enchilada dish. What we didn’t trim was flavor.

Very good. I addeded onions, cumin and a little cayenne. And I used green and orange peppers because that is what I had on hand. This was very simple and tasty and I will definitely make it again!

Excellent! Very flavorful. I too added a little water to the sauce and used 3/4 lb. of hamburger. I threw in a little red onion, used a little more cheese then it called for. It was fast and easy and wonderful!! I filled 12 tortillas.

as far as I was concerned I made this but I used 2 lbs of ground beef and a whole green and red pepper as well as I used a jar and a half of salsa also I added about 1/4 cup of water to the empty jar of salsa and added that to the mix.. I will make again but I will throw the totillas in hot oil and fry them a lil bit and then add the zesty dressing..

The meat mixture was good, but the finished product wasn't.

All we could taste was the red and green Bell Pepper ... I should have listened to myself and omitted at least half of the Bell Pepper... One cup total for 1/2 lb. ground beef was overkill in our book ...

When I started this recipe I did not realize how much detail there was to it. I definately buy thicker tortillas next time, as mine fell apart in the process.

First time cooking enchiladas, I was a little nervous. Family loved it and had enough for leftovers!
