Better-than-Ever Beef Enchiladas

Better-than-Ever Beef Enchiladas recipe
We cut out a little of the meat, upped the veggies and used better-for-you ingredients to trim calories and fat from this enchilada dish. What we didn’t trim was flavor.

I doubled the meat and cheese and made 10 flour tortillas-corn was not available. My picky family really enjoyed it and I will make it again-although I might cut down on the peppers a bit!!

We loved this recipe, it was very easy and great. It is much healthier than the enchiladas I have made in the past and tastier. I will definitely make this recipe again. Thanks!

I've made this recipe twice in the last two evenings; it is great! I've found one cup of salsa is not enough to adequately cover the bottom of the pan and drizzle over the enchiladas, so I use more to suit my taste. My husband loves these!

I changed the recipe by adding some jalapeno cheese to the stuffing and used the mexican style on top. Then I also made a little extra of the meat mixture to also pour on top. My two and a half year old loved it.

I made this recipe for my Family. My Husband and I are doing Weight Watchers, and wanted to have something point friendly. I was afraid my 11 year old wouldn't like because of the Salsa. But, she asked for seconds. It was awesome!!!! During dinner my husband insisted that I make it again. =) Thanks Kraft!!

It was alright. Neither my husband or myself were very tempted to have seconds for dinner the night I made this. I don't think I'll be making this again. I'll stick with tacos.

We absolutely loved this one!! I used flower tortillas instead of corn, and yellow peppers instead of red and green. I added a little water to the left over filling and a spiceier salsa and thickened it slightly to make a sause for on top of them. I might even try and add some beans next time. quite tastey!!

We love onions and added a yellow one to the beef (which was ground turkey instead) and peppers. Also, I think we'll use chicken next time. Very good though!!

Used whole wheat tortillas and added fresh lime juice while cooking the meat. Turned out great!

This was excellent! Very easy to make. My boyfriend normally complains at least once when I cook something but his lips were sealed! Will definitely make it again.
